BOXTY BREAD
1.5 LBS POTATOES PEELED
12 OZ SELF RAISING FLOUR
1 TEASPOON BAKING POWDER
2 OZ MELTED BUTTER
SLAT AND PEPPER
MILK
OVEN TEMPERATURE 400 F
BAKING TIME 25 MINUTES

Traditionally this bread was made in a pan over an open fire. You may use a lightly greased griddle on your stove top and cook each side 12-15 minutes per side.
Boil half the peeled potatoes  until soft then drain the potatoes  and mash well seasoning with salt and pepper.
While waiting for the potatoes to cook grate the the raw potatoes onto a clean tea towel then squeeze  the water of the grated potatoes in the tea towel  into a bowl. Let the liquid in the bowl settle then  carefully drain off the water keeping the starch that has settled in the bottom of the bowl.
Mix the mashed boiled potatoes and the grated potatoes together, sift in the flour and baking powder and mix, then add the starch  and mix well..add the melted butter and  a little milk as needed to form a soft dough.Knead the dough gently  on a little floured surface, divide the dough into four pieces and shape them so that are round and flat. Place on a greased baking sheet  and using a knife mark each round of dough with a cross , brush top with a little milk for a glaze and then bake until the bread is golden brown. 


ST. PATRICK'S CAKES
4 OZ. FLOUR
4 OZ. BUTTER
4 OZ. CASTER SUGAR
2 EGGS
1 TSP. BAKING POWDER
GREEN FOOD COLOURING (Optional)
WHITE GLACE ICING
OVEN TEMPERATURE 375 F
BAKING TIME 15 MINUTES

Cream together in a bowl the butter and sugar until fluffy. separately beat eggs in a bowl that is set over a pan of warm water then add a little at a time  to butter and sugar mixture . Sift flour  and baking powder together in a bowl then fold into mixture. put batter into paper lined cupcake tin  (makes about 12) Bake until batter rises and is golden in colour. 
Decorate the cakes with coloured icing

CHAMP
1 LB POTATOES
8 SPRING ONIONS
1/4 PINT LIGHT CREAM
4 OZ MELTED BUTTER
SALT AND PEPPER
SERVES 4

Peel, quarter and boil potatoes in lightly salted water , drain well. cover pot with clean tea towel. Trim spring onions and reserve green tops, chop the onion finely ,place milk and onions into pot and bring to boil for 3 minutes. Mash potatoes well and salt and pepper to taste then slowly add milk mixture mixing well. divide into four bowls  make a well in centre of potatoes and pour in 1 oz melted butter into each.
